Fillet Steak with Morel Mushrooms and Chateau Les Ormes

Sometimes the meals that have the least ingredients and the simplest recipes are the best and this one for Fillet Steak with Morel Mushroom and Red Wine Sauce certainly ticks that box. We're matching it to one of our best selling wines at the moment, Chateau Les Ormes Saint-Julien 2008. What you need

For the steak

2 Fillet Steaks salt and freshly ground black pepper 3 tbsp olive oil

For the sauce

115g/4oz morel mushrooms, cleaned 2 shallots, peeled and finely chopped 1 clove garlic, finely chopped 200ml/7fl oz red wine 2 tsp finely chopped fresh thyme leaves [caption id="attachment_1070" align="aligncenter" width="225" caption="Morel Mushrooms"]Morel Mushrooms with Chateau Les Ormes 2008[/caption] What you do Rub the steaks with half of the olive oil and season with the salt and pepper Heat a pan on a high heat until  it starts to smoke then carefully lay the steaks in. Cook for 3-4 minutes before turning and repeating on the other side (for rare steaks, cook for longer if required to your taste. Remove from the pan to rest on warm plates covered with foil.   In the same pan, reduce the heat and pour in the remaining oil. Fry the shallots and garlic for a couple of minutes until they start to soften. Add the morel mushrooms, fry for a couple of minutes then season. Pour in the wine and simmer for 5-6 minutes to reduce and thicken (ideally use the Chateau Les Ormes but any full-bodied red will be fine). Sprinkle in the thyme.   Pour the sauce over the steaks and serve with peppery leaves and Chateau Les Ormes Saint-Julien 2008.  

Why it works

Château Les Ormes is made with 60% Cabernet Sauvignon and 40% Merlot so has a really juicy, fruity richness. The Cabernet gives the wine really good structure and plenty of ripe tannins, the weight of the steak balances these and makes everything much smoother. There is an earthy, smoky, savoury quality which works beautifully with the mushrooms but does not overpower them. Overall the wine is a great big mouthful of black and red fruit with a firm grip and fresh finish. Combined with the steak and the morels it is delicious and a fabulous quick mid-week treat tea.
