To counter the sudden change in the weather (good reminder why we should never complain about the heat), we're adding a bit of spice in the form of spicy seafood pho from Bun Cha. Make a date with your local fishmonger to fetch a generous portion of king prawns and squid for the recipe, and don't forget proper birdseye chillies to bring a hit of real Vietnamese spice to your dish. The wine we've chosen for the pho is Austrian Pannobile. This dry white lends fantastic balance to the fresh chilli and compliments the salty broth.
