The weather is getting warmer and this is evident in the wines that are our current best sellers. They are mostly white and rosé and since we've recently had a 'Focus on Chablis', I'm going to highlight Charly Nicolle Chablis 'Mont de Milieu' 1er Cru 2011 which recently was awarded 5 stars at Decanter's Chablis 1er Cru tasting. He lives, eats and breaths wine. There is a real 'family' feel to the winery with everybody having their part to play and the result is wines that are bourne out of love with true regional characteristics. One of the most iconic areas in Burgundy is Chablis and the crisp, elegant style of the wine is in part thanks to the soil of the area. It is limestone rich clay which adds a distinct 'minerality' to the wines made from the Chardonnay grape. Charly makes great efforts to ensure the 'terroir' is evident in all his wines. Charly Nicolle Chablis 'Mont de Milieu' 1er Cru 2011 has an almost heady character on the nose with white flowers, white pepper and ripe peach. The palate is clean and delicate but with a weight and texture expected from a 1er Cru Chablis of this quality. A pleasure to drink with a fresh, steely finish. The wine is elegant but has a structure and weight due to maturation on its lees for 12 months. This means the wine pairs well to creamy dishes with fish, pasta or chicken. Seafood would also be a good match for the fresh acidity and creamy cheese such as brie or Port Salut work very well.
