Grown in the Aconcagua Valley, a short drive north of Santiago, the grape gets plenty of sunshine for deep blackcurrant fruit. Vineyards only about 37 kilometres from the Pacific bring cooling breezes that keep it fresh and lively, with a cool mint note running through it. The winery works with sustainability in mind, and the wine feels honest and polished rather than heavy. Pour it with grilled steak, roast lamb or a proper barbecue, and give it a little air first.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eTaste\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eRich blackcurrant and dark cherry lead, with a hint of fresh mint and a perfumed edge of flowers and iron. There is lovely intensity and density through the middle, with tightly knit, finely grained tannins and crisp acidity that keep it juicy rather than heavy. The finish is long and herbal, and it leaves you wanting another glass. Aged for 14 months in French oak, only about 20% of it new, so the fruit stays front and centre. Its Cabernet comes largely from the Las Vertientes vineyard, planted in 1999 among the hills of the valley, where stony soils and cooling breezes from the Pacific give the grapes freshness and structure. Winemaker Pancho Baettig is known for his skilful blending and for wines that value balance over power.
