Sauvignon Blanc from vines 30 to 40 years old, fermented with its own yeasts, gives a ripe, generous style, with mango, pineapple and sweet lemon, and a mineral finish that contrasts with its roundness. It is richer and fuller than many Pouilly-Fumés, but it keeps its freshness. Serve it well chilled as an aperitif, or with oysters, fatty fish, white meats and strongly flavoured cheeses such as Crottin de Chavignol.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eTaste\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eClear, pale gold with silver reflections. The palate is full bodied, rich and silky, with a mineral note on the finish that contrasts with its roundness. A powerful, gourmand style. Fermented in stainless steel with indigenous yeasts. Matthieu comes from a Pouilly-Fumé winemaking family, and in 2019 the couple took on a neglected vineyard in the north of the appellation, only 2 kilometres from the Loire, and restored it with organic farming. Their vines are around 40 years old, and the Magma is made from equal thirds of the estate’s three soils: fine grained Barrois limestone, Kimmeridgian clay and marl, and silex sands.
