It has a beautiful breadth on the palate, supported by a delicate acidity and a finish of exceptional persistence. The nose is complex and subtle, with quince, walnut, honey, ginger and acacia, and a hint of linden blossom. The palate opens with a frank, unaggressive attack, then turns very elegant, with beautiful breadth, a fresh mineral streak and a pleasant, rounded body. The finish is long and persistent, with a note of almond. Part of the wine is fermented and aged in large 600 litre oak barrels, mostly used, and the rest in stainless steel, with regular lees stirring to build texture. Its modern story began in 1990, when Michel Chapoutier took charge and set about showing off individual vineyard sites, introducing single vineyard bottlings and even putting Braille on the labels. Farming is certified organic and biodynamic, driven by respect for the soil.
