These are some of the few Verdejo vines in Spain that were never touched by phylloxera, growing on sandy, stony soils on the terraces of the Voltoya River. Smoke, fresh herbs, minerals and a lemon cream fruit give it a serene elegance, with a creamy, glyceric texture and zesty acidity. It is a white for the table, with roast chicken, rich fish, shellfish or cured meats, and a short decant opens it up. Serve it lightly chilled, not ice cold.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eTaste\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003ePale old gold in colour. The nose unfolds with a serene elegance, with subtle smoke, fresh herbs, minerals and fruit reminiscent of lemon cream, and in older vintages a creamy mix of orange peel, white flowers, toasty notes and dried nuts. The palate is full, creamy and spicy, with excellent acidity and well judged oak, and the finish is elegant, intense and long. Fermented and aged on its lees in oak for around nine months, then assembled and bottled in the summer of 2024. The idea came from Pedro Ruiz, who saw that Ossian could be to Verdejo what Carraovejas was to Ribera del Duero. The family has acquired and restored old vineyards in and around Nieva in Segovia, where many vines are between 100 and 200 years old and certified organic by the Castilla y León organic agriculture council.
