It is 100% Chardonnay, fermented in stainless steel and left on its fine lees, so nothing comes between you and the steely, flinty character Chablis is famous for. Green apple, lemon zest and white flowers lead into a crisp, saline palate with a hint of oyster shell, and a touch of silky weight from the lees. Serve it well chilled with oysters, fish tartare, grilled sardines or prawns, or simply with gougères and an aperitif.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eTaste\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eBrilliant straw yellow with pale green highlights. The nose opens with fresh green apple, lemon peel and white plum, layered with white blossom, crushed flint and damp oyster shell. The palate is bright and beautifully focused, with citrus, crisp pear and orchard fruit, pronounced flinty minerality and vibrant acidity, and a subtle silkiness from its time on the lees. The finish is long, saline and refreshing. Fermented and aged in stainless steel and enamel tanks, with no oak. Sylvain Mosnier, who began as a motor mechanic teacher, set up on his own in 1978, and today his daughter Stéphanie and her husband Christophe help run the vineyards and make the wines. The estate’s vines are old by Chablis standards, planted on Kimmeridgian limestone and clay full of fossilised oyster shells, and the cellar is a picturesque 19th century double vaulted one.
