The oak gives a rounder, more generous style than the estate’s classic tank fermented Chablis, with vanilla and licorice shaped by a firm mineral backbone. Peach, flowers and bergamot sit alongside very saline flavours and a smooth, seductive fruit character. It is a Chablis for the table rather than the oyster bar, so serve it lightly chilled with roast chicken, lobster, creamy fish dishes or soft cheeses, and give it a short decant.\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eTaste\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003eGolden yellow in colour. The palate is smooth, with very gentle oak, very saline flavours and bold, seductive fruit, with the flinty tension of Chablis running underneath. A slender, regal finish. Fermented and matured entirely in barrel. Sylvain Mosnier, who began as a motor mechanic teacher, set up on his own in 1978, and today his daughter Stéphanie and her husband Christophe help run the vineyards and make the wines. The estate’s vines are old by Chablis standards, planted on Kimmeridgian limestone and clay full of fossilised oyster shells, and the cellar is a picturesque 19th century double vaulted one.
