Cava d’Onice is a small, family-run estate in Montalcino led by Simone Nannetti, whose artisanal approach and passion for Sangiovese are at the core of production. The estate champions sustainable viticulture, limiting interventions in both vineyard and cellar. One of the things that truly sets Cava d’Onice apart is their commitment to expressing the diversity of Montalcino’s terroir: each parcel is vinified separately, highlighting different soils and exposures, and resulting in wines of marked individuality and depth.
