From the estate's "Definitiv" range, this 2023 Grüner Veltliner comes from Ried Freiheit — the first vintage to change how the single vineyards are made. The debut 2022s spent a long, six-month malolactic in stainless and were bottled before they'd settled, staying closed and unapproachable for their first two years. For 2023, still mid-malo, the estate found large old barrels instead and gave it a second winter in cellar — a reversal nobody they asked had tried. The result: Grüner at its more layered, textured end, generous but finely tuned, with spice, salt and structure woven through the fruit.

Yellow apple, pear and ripe citrus lead, with white pepper, herbs, a little nutty richness and a stony, savoury edge. The palate is supple and mouth-coating, but held in balance by fresh acidity and a mineral line that keeps the wine moving. Serve with roast chicken, pork loin, schnitzel, creamy vegetable dishes, pressed cheese or trout.
The Wine
100% Grüner Veltliner from Ried Freiheit, a west-facing parcel on the Gobelsberg border with Kremstal. The site’s quartz-rich, gravelly soils and low lime content shape a Grüner with lift, detail and a distinctive savoury core.
What is Grüner Veltliner?
Grüner Veltliner is Austria’s signature white grape and one of the country’s great wine strengths. It can range from light, peppery and brisk to rich, layered and ageworthy, but its calling card is usually a mix of green-herb lift, white pepper, citrus, stone fruit and vivid acidity. In the right hands and on the right soils, it becomes much more than an easy aperitif wine: it can carry weight, texture and real gastronomic range. That versatility is exactly why it matters, because few grapes so neatly combine everyday usefulness with serious regional identity.
About the Producer
Feldtheorie — German for "Field Theory" — is a small organic estate in the heart of Austria’s Kamptal, founded by Robert and Uli, two Germans who fell in love with wine while travelling the world together. Robert holds a PhD in Physics and Uli a PhD in Chemistry, and they built Feldtheorie as a project where they could intricately blend the rigour of the science they mastered with the beautiful unpredictability that Nature offers. That spirit runs right through the range, from the physics-inspired name to playful, questioning cuvées like this "Relativ" and the single-vineyard "Definitiv" bottlings.
Their vineyards lie around the wine town of Langenlois, worked organically, with a historic cellar on the banks of the river Kamp at Schönberg and further holdings in the neighbouring Kremstal near Senftenberg. Alongside the Kamptal signatures of Grüner Veltliner and Riesling, Robert and Uli craft Sauvignon Blanc and characterful reds including Pinot Noir, Zweigelt and Blaufränkisch — fresh, honest, terroir-driven wines made where precision meets nature.

Your E-gift card will be delivered immediately to your email inbox for you to print off or forward on.
As indicated in our Quality Promise we will happily refund or exchange any faulty bottles. All we ask is the bottles in question are returned to us at least half full for verification purposes. If a bottle is broken on delivery we will also replace or refund it but we do require photographic evidence of the breakage. Equally we can arrange for the bottles to be collected the next time you receive a delivery from us.
Should we be unable to fulfil any part, or all of an order, Perfect Cellar (Beyond the Bottle Ltd) will suggest comparable substitutions. You are free to refuse these suggestions and are eligible for a full refund of relevant parts of the order.
In all instances, Perfect Cellar (Beyond the Bottle Ltd) must be informed of any claim within 24 hours of receipt of delivery by email or telephone. All refunds will be issued after we have received and approved the faulty items and the amount will be re-credited to your account within 30 days. The amount refunded will be equal to the full amount paid for the relevant products at the time of purchase and must be made by the same payment method as the original sale.
If you choose to cancel your contract of sale with Perfect Cellar (Beyond the Bottle Ltd) you may do so within 30 days of receipt of the goods. If the goods have already been dispatched they must be returned to us unopened and undamaged, and Perfect Cellar (Beyond the Bottle Ltd) will not be liable for any costs associated with the original or return delivery.
No refund can be given when a case has left bond as the value will be affected. Individual bottles of Fine Wine will be considered for refund on a case-by-case basis.
We advise contacting our Customers Services team before making any claim to ensure the process goes as smoothly as possible.
Advent Calendars - Due to the made-to-order nature of our Advent Calendars, they are not eligible for a full refund. However, we reserve the right to issue a refund in the form of store credit.
